Marvelous Mushrooms

I never really liked mushrooms while growing up. They were those rubbery little things on pizza. Salty. Slimy. Gross. As an adult, I've fallen in love with mushrooms. And, after learning how healthy they are, I eat this fresh whole food almost daily!

Did you know raw white mushrooms:
  • Only contain 15 calories per cup
  • Are a source of fiber and protein
  • Are rich in vitamin D and folate

Here Are 5 Ways I Indulge in Mushrooms
1. Saute mushrooms and onions, then add them to pasta sauce.
2. Make a fresh sliced mushroom and cheese quesadilla.
3. Top a salad with fresh mushrooms.
4. Partner mushrooms with cherry tomatoes and green pepper chunks on kabobs for the grill.
5. Add mushrooms to risotto, pizza and omelets.

  1. My husband has taken over the meal preparation now we're retired. He cooks chopped mushrooms in almost everything he makes. On kebabs, in soups and stews, chopped in pasta sauce, fried in vegetables. The list goes on and on. The way I like them best is sprinkled with salt and pepper and baked whole in the oven.

  3. Mushrooms are awesome. I love them in all the ways that you wrote about. I also love to find really large mushrooms so that I can slice them and cook them in a skillet with just enough olive oil to coat the pan...and a little salt and pepper, then make a mushroom sandwich on some kind of yummy toasted bread with a little lettuce.

    Also good are some button mushrooms sauteed with olive oil and loads of fresh garlic, salt and pepper. I can make a meal out of that along with some bruschetta.

  8. My husband can't eat mushrooms, the upset his stomach! So once per month when he's having dinner with his buddies or any other time he's out at dinner time, my mom and i ( she lives next door and I cook her dinner) dine on mushrooms in pasta or stew or on pizza or with chicken i could go on and on oh did i forget omelets!

    1. Well, good for you! My hubby does the same sort of thing when I head out of town. I'm a vegetarian, so when I'm off visiting family he loads the grill with steaks for himself and the fur babies! LOL! ~Angela

  9. Overall, I think that mushrooms are icky, though they make for some really cool photographs. I do like brown mushroom gravy when they are chopped really small.

    1. Hi Suzanne! Thanks for stopping by! It did take me awhile to get use to the texture of mushrooms, and if they aren't cooked properly, they are gross! For example,fried mushroom balls that have squishy liquid inside...eww! ~Angela

  10. I LOVE mushrooms so much I find any excuse to put them in my food. I especially love to put them in with my Italian dishes. There is just something irresistible about putting lots of mushrooms, green peppers, and zucchini into sauces!

  11. I've always liked mushrooms and I'll take 'em any way that I can get 'em. Love them on pizza, in pasta, and raw on salads. My favorite though are the ones that are stuffed with things like cheese and crab meat. That's probably the worst for me but sure is delicious.
