Blueberry Flax Seed Pancakes

How are you eating healthy today? I'm serving up a plate of blueberry-flax seed pancakes for breakfast.

No, there's no recipe. I simply tossed a handful of blueberries and a few tablespoons of milled flax seed into my gluten-free pancake batter. I like the extra nutrition and the flavor!

On our honeymoon we indulged in wild rice and blueberry pancakes several mornings. It's a popular breakfast treat in Northern Minnesota. Since I don't have wild rice on hand, I used flax seed for the nutty flavor and texture.

What do you like to add to your pancakes to make them healthier?

  1. Yum pancakes. You know my mom like the gluten free ones better than the regular ones. I just am very concerned about the recipe I use because it uses cottage cheese and it's very high in sodium. I love to add vanilla to my pancake mix and fresh fruit on top!

    1. Oh! I've never heard of adding cottage cheese. I bet that makes them very creamy inside! Hmmm. Yes, if your mom is gluten-sensitive, read the cottage cheese label closely. Many brands contain wheat-based emulsifiers like mono- and di-glycerides.

  3. I eat cereal for breakfast--bran flakes with added toasted oats and a few flax seeds. I pour almond milk over it and eat with a drizzle of honey. I guess it's the same thing in a different form.

  4. Hi, I was wondering what you thought of the "healthy balance" spreads. I use them when I make pancakes. They advertise omega 3's and healthy oils? Do you think this is a healthy substitute? Thanks for your input.

    1. HI Mary! Thanks for stopping by! I have not tried that product. So, I Googled it and found something called Smart Balance spread. Is that the one you use? http://www.smartbalance.com/products/buttery-spread/smart-balance-omega-3-buttery-spread?ref=home

      The ingredient list looks good, not great. It shouldn't need artificial flavoring to taste good.

      I usually stick to butter (ingredient list: cream, salt, butter) and use it in moderation. I'm also leery of products that "add vitamins". These are so overly processed that they usually don't do much good.

      Get your vitamins and omega-3s from whole foods sources like oily fish or flax seeds. :) Happy eating! ~Angela
